Arnaud Dissais is the head of the bar program at Three Fourteen, Greenport’s most ambitious new cocktail bar. Dissais has worked in Paris, London and New York and held posts at some of the world’s top restaurants, including Hotel de Crillon, Criterion, Sketch and the Plaza Athénée in Paris. He sat down with Barchive to tell us about Greenport and what makes him tick.
HOW’D YOU END UP IN GREENPORT?
I moved to NYC and became the head bartender at Daniel (Daniel Boulud’s flagship restaurant). After a decade of working in fine dining, I decided to dive headfirst into the downtown cocktail scene. I was part of the opening team at Loosie Rouge in Brooklyn, where I met a partner at Three Fourteen. After Loosie, I managed Mace in the East Village, lauded as one of the World’s 50 Best Bars. When I got the call to head the bar program at Three Fourteen in Greenport, I couldn’t say no. I was excited to bring my experience to such an awesome destination in the North Fork.
WHAT’S THE VIBE AT THREE FOURTEEN?
Three Fourteen opened earlier this summer and has 1970s-themed decor with a mid-century twist. It offers a funky hotel lobby feel with a large outdoor space reminiscent of France. There is an air of freedom and uniqueness to the space. We have weekly
events like night DJ sets—often with our favorite Parisian DJ Xavier— and Sunday afternoon BBQs.
GREENPORT IS BUBBLING OVER WITH NEW BARS. WHAT ARE SOME OF YOUR LOCAL
I still have a lot of places to check out, but our neighbors Brix & Rye is a Greenport institution with some nice craft cocktails. Kontiki has a cool vibe, great drinks, and an amazing food menu run by Cheo Avila. Claudio’s also opened a new bar this year, proving that the cocktail scene is really changing and growing in this town.
WHAT IS GREENPORT’S DRAW FOR TOP BAR TALENT?
The draw is that Greenport is a quaint fishing town with exciting bustling bars and restaurants. It’s a great area for sourcing incredibly delicious local produce, plus it’s a stone’s throw from Shelter Island — a really majestic oasis. Greenport offers something for everyone—water sports, cycling, hiking, art walks, beautiful beaches, excellent vineyards, great breweries, organic farms and let’s not forget the lavender fields – a must-see!
WHAT ARE YOUR TOP RECOMMENDATIONS AT THREE FOURTEEN?
Our cocktails have been a huge hit. Some bestsellers include the Tricky Nikki (honeycomb, jasmine-infused gin and fresh citrus)
and our slushies, like the Nude and Fabulous (coconut-infused mezcal, yellow Chartreuse and Aperol) and the Unicorn Cream Scene
(dark rum, yuzu and ube ice cream). Other favorites include Miss Frizzle (it’s topped with rainbow sprinkles), Le Milk Punch (made with chocolate sesame infused tequila) and The Leyna (pandan-infused gin, mezcal, coconut milk and a sriracha tincture). On the weekend, you should definitely swing by for one of our BBQs, grab a Knockwurst hotdog or a barbie burger, and try your hand at a game of petanque! We also have jeroboams of rosé for large groups.
